Ingredients
1 cup Yogurt (dahi)
1 Cucumber, preferably English grated
1/2 Finely chopped red onion
1 Tomato (optional)
½ tsp Black Salt
3 – 4 Mint leaves, fresh or substituted with ½ Teaspoon dried
A pinch of Sugar
Method
▪ Add Yogurt to a bowl with ¼ tsp Black Salt and Sugar, whisk the ingredients to a consistency.
▪ Slice Cucumber into bite-size pieces or your preferred size and add slices to Yogurt. Add tomatoes and onions.
▪ Garnish with remaining Salt and Mint leaves.
▪ Serve your seasoned yogurt (Raita) chilled.
Raita (Seasoned Yogurt) with Grapes & Pecans
Ingredients
1 cup Yogurt, Natural, 3% preferable
½ tsp Roasted Cumin seeds, grounded
1 tsp Sugar
½ tsp Black Pepper
½ cup Grapes, seedless, halved
¼ cup Pecans or Walnuts, roasted
Pinch of hot Red Chilli Powder for garnish (optional)
Salt to taste
Method
Whisk Yogurt in a serving bowl.
Add all spices, Grapes, Sugar and salt in a bowl.
Serve chilled.
Refreshing and cool Raita is ready to be served with any curry
Chakundar Raita (Beets)
Ingredients
2 medium size Beetroots
3 cups Yogurt
1 tsp Roasted cumin powder
1 tsp Red chilli powder
Salt to taste
Method
▪ Boil beetroot. Peel, cool and dice into half centimeter pieces. Set aside.
▪ Beat yogurt to a smooth consistency. You can also strain the yogurt through a muslin cloth to get a smooth consistency.
▪ Mix beetroots with yogurt. Add roasted cumin powder, red chilli powder and salt.
▪ Mix well and serve chilled.
