I love mixing traditional to fusion recipes. This is very dear to me as my Beeji taught me to make this Chakri baingan recipe which you can eat as a Subjee masala pairing with aloo (Potato)
Ingredients
Eggplants cut in rounds 2
Spice mix to go on eggplant - Mix in a bowl together and apply to Eggplant
Red chilli powder 1tsp
Salt to taste
Turmeric 1/2 tsp
Coriander powder 1 tsp
Yogurt 2 cups to plate & eggplant once ready, will go on the plate with the following spices as garnish
Roasted cumin seeds big pinch
red chilli powder to taste
Chaat masala or Digestive masala from Papajee foods 2 tsp
For tadka (jhok on top of the raita ), the following spices
Oil 1 tbs
Curry leaves 5-6
red chilli powder to taste
Cumin seeds 1/2 tsp
Whole dry red chillies 2-4
Hing powder (asofetida) is optional
Method
Fry eggplant in a pan with spices in oil.
Now plate the yogurt .Put fried Eggplant on it .
Put spices on it as a garnish.
Now lets add tadka (Jhok) by heating the oil in a small pan. Add Curry leaves, Red chilli powder, Cumin seeds and whole chillies.
Your eggplant Raita is ready. Enjoy.
