Shikhanji | Indian Lemonade

Shikanji is a traditional Indian lemonade.

Ingredients:

- 4 medium-sized lemons

- 1/2 cup sugar (adjust to taste)

- 1 teaspoon black salt

- 1/2 teaspoon roasted cumin powder

- 1/4 teaspoon ground black pepper

- 4 cups cold water

- Ice cubes

- Fresh mint leaves for garnish (optional)

Instructions:

1. Start by juicing the lemons. Roll each lemon on a hard surface while pressing down gently to soften them. Cut each lemon in half and extract the juice using a citrus juicer or by hand using a strainer to catch the seeds. Pour the lemon juice into a pitcher.

2. Add sugar to the lemon juice. Stir until the sugar dissolves completely.

3. add black salt, roasted cumin powder, and ground black pepper to the pitcher. Mix well to combine all the ingredients.

4. Pour cold water into the pitcher and stir until everything is well incorporated.

5. Taste the Shikanji and adjust the sweetness or tartness by adding more sugar or lemon juice.

6. Add ice cubes to serving glasses and pour the Shikanji over the ice.

7. Garnish each glass with fresh mint leaves for an extra burst of flavour (optional).

8. Serve immediately and enjoy the refreshing and tangy taste of homemade Shikanji!

Feel free to adjust the seasoning according to your taste preferences. Some people like to add a pinch of ground ginger or chaat masala for an extra kick. Enjoy your homemade Shikanji on a hot summer day or anytime you need a revitalizing drink!
