
Ingredients:
• Noodles:
• 2 bunches soba noodles (boiled as per package instructions)
• Sauce:
• 2 tbsp soy sauce
• 2 tbsp chili sauce
• 1 tsp sugar
• 4 tsp balsamic vinegar
• For Stir-Fry:
• 1 tbsp olive oil
• 1 cup mushrooms (sliced)
• Pinch of salt
• 1 tbsp fresh ginger (minced)
• 2-3 green chilies (finely chopped)
• 3-4 garlic cloves (minced)
• 1 cup extra-firm tofu (cubed)
• Green onions (for garnish)
• Optional:
• Avocado (for serving)
Method:
1. Cook Noodles:
• Boil soba noodles as per the package instructions. Drain and set aside.
2. Prepare Sauce:
• In a bowl, mix soy sauce, chili sauce, sugar, and balsamic vinegar.
3. Stir-Fry:
• Heat olive oil in a pan. Add mushrooms with a pinch of salt and sauté until tender.
• Stir in ginger, green chilies, and garlic. Cook for 1-2 minutes.
• Add tofu cubes and cook until lightly golden.
4. Combine:
• Add cooked soba noodles and pour the prepared sauce over them. Toss everything until well combined.
5. Serve:
• Garnish with green onions and serve hot. Add avocado slices on the side, if desired.
